Sauteed Cabbage With Turmeric

Image
Recently I am eating cabbage more frequently. It is because I want to improve my health. And cabbage can stay longer in the fridge compared to some other vegetables like spinach and mustard greens. It is easy to prepare too.  However I sometimes don't really like the thicker part of cabbage. Usually I cut it smaller and thinner.  Recently too I frequently saute cabbage with turmeric and anchovy. I love to eat it with white rice and curry, with white rice and chicken in soy sauce, and many more. I think it is suitable to be eaten with rice and curry.  This dish I called sauteed cabbage with turmeric is made with onion, garlic, anchovies or anchovy cube, chili, mustard seeds and of course turmeric. I love the taste. It is inspired by Muslim Indian restaurant menu, but I don't really sure and don't have the recipe of their cabbage dish. So I invented my own sauteed cabbage with turmeric instead.  So lets see the recipe. This recipe is for 2 servings.  Ingredients 1...

Mushroom curry

Image
I almost forgot that we have some split gill mushrooms in the fridge. This morning I found them almost completely dried due to the cold refrigerator temperature. I decided to cook two dishes with these mushrooms, 1 for lunch and 1 for dinner.  I remembered that my dad said that split gill mushrooms can be cooked as curry so I decided to cook mushroom curry. I have adjusted this curry recipe to suit the mushroom dried condition and lack of flavor after sitting in refrigerator for more than a week. I added some stock to cover up the lack of mushroom flavor. Being a homemade cook also require us to be creative and adjustable sometimes, in order to save time, and save some ingredients which almost go bad.  Difference in taste between gulai and curry Lots of people mistakenly called gulai as curry when they came to Malaysia and maybe Indonesia. Actually there are some difference between gulai and curry. I am not very knowledgeable in spices mix but I try to explain a bit ...

Sauteed Okra

Image
Okra or lady's finger is a delicious and versatile vegetable. It can be sauteed, steamed, add into curry and soups, and many more. Young okra are soft and tender when cooked, they add  variety of flavor and texture in your curry and soup. In this entry I add this easy and simple recipe of sauteed okra which you can add as side dish to your rice and curry. I made this to accompany my canned sardine soup dish which I made for lunch that day. Okra usually goes well with fish dish.  In this recipe not much ingredients are used. I used shrimp paste to add more flavor to it. If you don' have shrimp paste you can use fried anchovies or dried shrimp, and even fresh shrimps.  Ready in around 15 minutes.  Ingredients 7 okras 2 shallots 1 pinch or 1/4 teaspoon shrimp paste or dried shrimp 1 bird eye chili 2/3 teaspoon salt A pinch of sugar 3 tablespoon cooking oil Methods Pound shrimp paste or dried shrimp, shallots and chili together. Slice the okras. Heat the oil in the pan. ...

Vegetable Pancake

Image
Vegetable pancake is one of my favorite breakfast food. It is delicious, nutritious and fulfilling. It is also a flexible recipe, as I can always change some of the ingredients based on what I have in the kitchen.  Lately I have been persuading myself to eat more and more vegetable everyday. As our age increase year by year, our risk in getting disease also increase. Diabetes, high blood pressure and heart diseases are some of the major health problems faced by many of us. There are also the dangerous cancer and kidney related diseases. Some efforts that we can all do to maintain our health are to consume more fruits and vegetables and drink enough water everyday. These are some of the easy way to take good care of our body.  So I made vegetable pancake as an effort to add more vegetable into my breakfast. The batter is soft but not fluffy, added with some crunchy vegetable such as cabbages and carrot. I just use ingredients that I already have in the kitchen. You can add diff...

I like both. And this is the recipe of loofah soup with cellophane noodles which we call suhun and anchovies.  There are many types or species of loofah. Potato And Spinach Soup

Image
Sometimes I yearn to eat spinach. I like the taste and soft texture. Here in Malaysia we usually did not consume spinach but amaranth leaves. There are many varieties of  amaranth leaves but the most commonly consumed are green amaranth, green and red amaranth and red amaranth. We usually call this amaranth as spinach. This is a recipe for cooking green amaranth leaves but maybe it can be substituted with green spinach.  This soup is usually served as side dish to rice. It can be eaten with rice and fried fish, fried chicken or meat, curry and many more. This soup can also be eaten on its own.  I used anchovies as the base flavor of the soup. But you can also use dried shrimp, fresh shrimp or beef instead of anchovies. The taste will be different though.  Ready in 30 minutes Ingredients 4 cups of green spinach 2 medium sized potatoes 3 shallots 3 cloves garlic 1 medium sized tomato 2 tablespoon anchovies 1 bird eye chili (optional) 2 cups of water 3...

Fried Bitter Gourd With Egg And Curry Flavor

Image
I eat bitter gourd for health. There is a saying my teacher always told us when I was still studying in school, which is "Bitter things are medicine". Yes for bitter gourd. And my teacher always refer the saying to bitter gourd.  Bitter gourd is a crunchy vegetable. What prevent people from eating it is its bitter taste. I have a tip to reduce the bitterness of this vegetable which I already wrote here .  Sometimes I go to mamak restaurants to eat rice for lunch. Usually I eat their beef curry and this fried bitter gourd with egg. I then learned this recipe and tried cooking this several times. And yesterday I cooked this fried bitter gourd again to partner it with beef curry. And my father said it is acceptable. My father is very critical when criticizing food. So I decided to add it here into my recipe archive.  I ate this dish many times in the restaurants. Some people cook it with the egg crispy at the edges. In some place the egg is not crispy....

Stir Fried Vegetable Fern

Image
Stir Fried Vegetable Fern One of my favorite vegetable is edible fern. Here we call it pucuk paku . I read that Philippines call it pako . This vegetable plant thrives in low and damp shaded area with high nutrient soil. It looks like fern, but with softer stem. The part that we use to cook is the shoots. And also some other soft stem with leaves. We must be careful to not to take the hard stem while preparing this vegetable or it might ruin the taste and texture of the dish.  Raw vegetable fern Raw vegetable fern. Raw vegetable fern prepared for cooking. The vegetable itself has a very unique taste, the type of taste when you eat some kind of mushroom. Hence, cooking it by itself alone already produce a distinct taste. Usually I cook it with dried shrimp to add more flavor. There are many ways to eat this fern, you can steam it, fry it or make a soup with it. Yesterday my father bought some pucuk paku and today I stir fried it for lunch. My family love it...

Easy and Healthy Bitter Gourd and Garlic Stir Fry

Image
Bitter gourd is bitter. But it is also crunchy. And it is good for health, good for diabetic patients and can boost our immune system. Even though it is bitter, it is one of my favorite vegetable. To reduce the bitterness, clean and slice bitter gourd like in the picture. Soak them in salted water for around five minutes. Then strain and clean it. Or marinate it with salt for about five to ten minutes. Then clean it.  Bitter gourd and garlic stir fry is a humble dish to me. It does not have variations of flavor in it. But that makes it as a suitable side dish for your lunch with rice and other dish. Dried shrimps may add flavor to this dish. You can imagine the salty dried shrimp flavor combined with the taste of sauteed garlic and a hint of bitterness from the bitter gourd combined in your mouth.  Ready in 15 minutes Ingredients 1 small bitter gourd 3 cloves garlic 1 tablespoon dried shrimp. Or some fresh shrimp. (optional) 1/2 teaspoon salt  1 tab...

Creamy Spicy Fern Soup

Image
Vegetable or edible fern is a famously consumed classic vegetable in my area. It gives a unique and exotic flavor, like of a mushroom. The stem is tender and the leaves is small and smooth. Only young shoots are used for cooking. This fern is usually cooked by stir frying it  with shrimp, beef, mushroom or cooked with coconut milk to form a creamy fern soup called Masak Lemak Pucuk Paku . The easiest way to cook it is to steam it and eat it with rice and other condiments like fish sauce, soy sauce or sambal. I cooked this long ago, and now I decided to share this recipe. The taste is unique, and this soup is usually eaten with rice. Ready in around 15 minutes Ingredients 200 gram vegetable fern (take only soft stem and young shoots with soft leaves) 3 cups coconut milk 2 tablespoon dried shrimp (can be substituted with fresh shrimp or anchovies) 3 to 5 shallots 1/2 inch fresh turmeric or 1/2 teaspoon turmeric powder 3 bird eye chili (optional) Sugar and s...

Yellow Vegetable Acar

Image
Today I cooked beef kerutuk, a curry like dish. So I thought a bowl of cucumber acar will suit my beef kerutuk perfectly. I decided to make this version of cucumber acar, which is called Yellow Acar. This version of mine is a simple version of this Yellow Acar. Is has a sweet, sour, salty and fresh taste. The amount of sugar, salt and vinegar can be altered to one's preference. You can also add in other types of suitable vegetable and fruits that you think suitable.  This is the first time making this acar for my family so it does not look really appetizing. But I still want to share the recipe and the pic will be upgraded time to time as I make other batch of it. I also added dried chili in it but I don't like it in there. So I omit it from ingredient. If you want to add chili I suggest to add fresh green chili.  Prep time : around 10 minutes Cook time : around 10 minutes Ingredients 1 medium cucumber 1 medium carrot 3 cloves garlic 5 shallot...
