Oyster Mushroom Soup
I like eating mushroom. It is a delicious and versatile vegetable packed with umami flavor. Mushroom soup, stir fried mushroom, crispy fried mushroom, mushroom fillings, I love them all. The unique flavor of mushroom make soups and tom yum tastier.
Today I bought a packet of oyster mushroom at nearby store. It looks and smell fresh. I decided to cook a clear mushroom soup with it. And I combined it with some other ingredients. It is tasty when eaten with hot white rice. You can also eat it on its own. Lets look at the recipe.
For 3 to 4 people.
7 garlics minced
3 shallots sliced
3 bird eye chili crushed
1 fish cake sliced thinly
1 1/2 cup water
1 anchovies stock/cube
2 tablespoons oyster sauce
Vegetable stock (optional)
1 Pak choy cut according to your preference
3 chives cut 1 inch long
3 cups oyster mushroom, tear to a smaller pieces according to your preference
Cooking oil, around 3 tablespoons
Methods
Heat the cooking oil in a pot.
Saute fish cake until a bit golden, or cooked.
Add in garlic and chili.
Add in shallot. Fry until aromatic.
Add in water.
Add in oyster sauce, vegetable stock and anchovies stock.
When the soup comes to a boil, add in chives.
Add in Pak choy.
Add in salt.
Lastly, add in mushroom and turn off the heat in 2 or 3 minutes.
Leave it for 5 to 10 minutes before serving, to let the mushroom flavor spread in the soup.
