Healthy and Easy Vegetable Pancake
Pancake is an ordinary dish in our house since I was a small child. But it is not the pancake the western people eat. Our pancake is a version of our own. We call it 'lempeng'. It is solid and soft. Sometimes it can be crispy, depending on the ingredients used and the method of cooking.
Our 'lempeng' or pancake is soft and a little bit salty. It is because we put margarine and salt in it. Yes margarine is not really healthy but we have been consuming it for decades.
I am not really a fan of plain lempeng pancake. My family eat it with sugar or condensed milk. Sometimes I eat it like that. But sometimes I eat it with curry or kurma. And many times, I add some vegetables in it.
Some of the vegetables I add in the lempeng pancake are Chinese celery, carrots, onions, cabbage, capsicum, chili and potato. This depends on what I have in the kitchen. Sometimes I just add Chinese celery only. Sometimes I add several vegetables in it.
Usually I eat my vegetable lempeng pancake with cheese sauce or chili sauce or tomato ketchup as topping. It is really nice and fulfilling. I like my vegetable lempeng pancake to be a little bit crispy on the edge and surface.
This vegetable lempeng pancake dish is suitable to be eaten during breakfast and dinner.
Here is the recipe of the vegetable pancake that I made recently. You can also add vegetable of your choice. And this recipe is suitable for vegetarians.
This recipe is for 3 servings.
Ingredients
🌸 Flour, around 1 cup.
🌸 1 egg.
🌸 1 table spoon of margarine. You can use butter too but the taste will be different.
🌸 1/3 to 1/2 teaspoon salt.
🌸 Water.
🌸 1/2 potato, cut into very small pieces. Or julienned.
🌸 1 onion, thinly sliced.
🌸 5 sprigs of Chinese celery. You can also put celery. Finely chopped.
🌸 Some carrot. Julienned.
🌸 Some capsicum or chili. Thinly sliced.
Methods
🌸Mix the flour, egg, margarine or butter, and salt in a bowl. Add some water to reach the consistency slightly thinner than a pancake batter.
🌸 Add all the vegetables. Mix well.
🌸Heat the pan. I use non stick pan. If you use other than non stick pan you may have to add some oil, margarine or butter to the pan.
🌸When the pan is well heated, add in the batter. Spread well and thin on the pan surface.
🌸Cook with low heat. Cook until the surface is cooked, and a little bit golden.
🌸Then flip the pancake and cook another side also until well cooked and a little bit golden.
🌸Then serve on a plate. Add the topping of your choice or eat it as it is. For topping you can add cheese sauce, tomato ketchup, chili sauce and many more.

If you want the pancake to taste a bit spicy, you can add black pepper powder or curry powder in it.
