Scrambled Egg Sandwich With Caramelized Onions

I made this menu for breakfast this morning. A sandwich filled with scrambled egg. A soft and simple sandwich. It suits my aching gut, that caused by gastric. And I was weak, as I was experiencing this stomach ache since yesterday. So I just made something easy and simple.  I made the scrambled egg, caramelized onion and make a one sided toast. Then I just assembled them together. The taste was good. And fulfilling. I think this simple recipe is easy to prepare, suitable for a busy morning. Let's see the recipe.  Ingredients  Egg  Cooking oil  Onion, I use red onion, sliced Mayonnaise  Sliced bread  Margarine or butter Methods  Heat a tablespoon of oil in a pan. Then pour in an egg. Grilled Prawn Recipe

Many years ago I, I made this roasted prawn during my family gathering. A tasty recipe. And my family like it. After that, I haven't cook the recipe anymore. Until now. Because I didn't buy dried oregano anymore. And prawn also getting more and more expensive. Back then, my family run a fresh seafood store so the prawn are easier to get.  This recipe combine the sweet and sour flavor combined with the taste of herbs. It is sweet and refreshing. Use medium to big prawn for a better and fresh taste.  Ingredients  1 kilogram of prawns  1 to 2 palm sugar or brown sugar  Tomato puree  5 cloves of garlic, cursed then minced  Some dried oregano  Salt to taste  A tablespoon of cooking oil.  Methods Mix the prawns with other ingredients and let them rest for an hour or two. Then, grill them on the fire. 

My mom's Chicken Rice (Malaysian)

My mom makes this nasi ayam or chicken rice around once a month. Especially when her grandchildren come to our house. Many of them and my far living cousins also loves my mom's rice chicken. To me, it's is a really decent rice chicken. I also like it just the way they are.  My mom's chicken rice comprises of cooked flavored rice, fried chicken, chili sauce, soy sauce, chicken soup and vegetables like cucumber, tomato and lettuce.  Actually my mother's fried chicken is dark in color because of the soy sauce used to marinade them. But my father doesn't like it. So my mum marinate those chicken with turmeric. But I still have the soy sauce to add the flavor to the chicken later.  My mom make nasi ayam or chicken rice with malay and home style. It is a bit different than Chinese style chicken rice. Refreshing and Cooling Rose And Calamansi Juice (Sirap Limau)

Rose syrup is a common drink you can get in Malaysian restaurants. It is usually cheaper than other drinks. And it usually come with ice.  Malaysian also loves to add Calamansi lime juice in it. It gives a sweet and sour taste to the drink. And it is also refreshing.  Rose and Calamansi lime juice is an easy and simple drink to make. And it can satisfy your thirst during hot weather.  Lets see this simple drink recipe.  Ingredients 1 teaspoon red rose flavouring.  2 teaspoon sugar. You can also use honey.  2 Calamansi lime. Plain water.  Some ice cubes.    Methods  Put the red rose flavouring into a glass.  Pour in plain water in it, around 1/2 glass.  Add in sugar.  Squeeze the juice from the Calamansi lime. Take out the seeds before squeezing.  Mix well.  Add in ice cubes.  Let it sit for a few minutes.  Enjoy your drink. 

Healthy and Easy Vegetable Pancake

Pancake is an ordinary dish in our house since I was a small child. But it is not the pancake the western people eat. Our pancake is a version of our own. We call it 'lempeng'. It is solid and soft. Sometimes it can be crispy, depending on the ingredients used and the method of cooking.  Our 'lempeng' or pancake is soft and a little bit salty. It is because we put margarine and salt in it. Yes margarine is not really healthy but we have been consuming it for decades.  I am not really a fan of plain lempeng pancake. My family eat it with sugar or condensed milk. Sometimes I eat it like that. But sometimes I eat it with curry or kurma. And many times, I add some vegetables in it.  Some of the vegetables I add in the lempeng pancake are Chinese celery, carrots, onions, cabbage, capsicum, chili and potato. Sauteed Cabbage With Turmeric

Recently I am eating cabbage more frequently. It is because I want to improve my health. And cabbage can stay longer in the fridge compared to some other vegetables like spinach and mustard greens. It is easy to prepare too.  However I sometimes don't really like the thicker part of cabbage. Usually I cut it smaller and thinner.  Recently too I frequently saute cabbage with turmeric and anchovy. I love to eat it with white rice and curry, with white rice and chicken in soy sauce, and many more. I think it is suitable to be eaten with rice and curry.  This dish I called sauteed cabbage with turmeric is made with onion, garlic, anchovies or anchovy cube, chili, mustard seeds and of course turmeric. I love the taste. It is inspired by Muslim Indian restaurant menu, but I don't really sure and don't have the recipe of their cabbage dish.    Banana is a well loved tropical fruit. It is sweet and soft. And a little bit creamy. Banana is less sweet when it just ripe, and become sweeter until it about to rot. It is usually eaten raw and fresh.  In Malaysia, there are many dish made with banana. Most of them are sweet dish, often eaten as dessert or breakfast. There are also banana curry, a dish from northern peninsula. Indian and Malay rice are also prepared by putting the rice and meat on a banana leaf. It is delicious, as the banana leaf aroma permeate the rice.  Today I will be sharing a dish made from banana which is 'Pengat Pisang' or when I translate it to English it become Banana in Sweet Coconut Gravy. Today I decided to make chicken congee for my aunt. It's been a long time since I made her the congee. She likes it a lot.  There are many recipes of chicken congee. But I decided to make the congee based on my aunt's preference. She loves it simple, plain and pure.  She also loves potatoes and carrots in her congee. The flavor is pure based on fresh ingredients used. It is a healthy food, and a fulfilling one.  Chicken congee is also suitable for people with fever. Some will prefer chicken soup. Warm chicken congee can refresh a sick soul.  This recipe is for four servings. It takes more than an hour to make.  Ingredients 3 shallots, minced. I like eating mushroom. It is a delicious and versatile vegetable packed with umami flavor. Mushroom soup, stir fried mushroom, crispy fried mushroom, mushroom fillings, I love them all. The unique flavor of mushroom make soups and tom yum tastier.  Today I bought a packet of oyster mushroom at nearby store. It looks and smell fresh. I decided to cook a clear mushroom soup with it. Fried Fish With Turmeric And Garlic

Yesterday we got fresh fish from market. I am not sure what the fish is called in English but I think it is called Ox eye Scad. The fish eye is bigger than ordinary fish eye. The fish taste more like Indian Mackerel to me but a little bit fattier. We decided to just fry these two fishes for lunch.  Hot deep fried fresh fish is just a very delicious meal for lunch. Plus the flavor from  fresh herbs from the marinade made you add more rice unconsciously. It is also a good pair for rice and curry, rice and gulai, and rice and fish soup.  The fish is best eaten just after it is being fried, while it is hot. If you keep the fried fish longer the fish may become soggy and cold. This recipe is easy to make. You can use both river and sea fish for this recipe, and fresh fish is the best option. This is an all time Malaysian favorite. An Asian dessert, kuih ketayap is a pandan flavored crepe with sweet coconut filling. The soft pandan flavored crepe is really delicious when partnered with sweet and juicy grated coconut. It is also rich with it's tropical flavor.  This crepe or what Malaysian call kuih is suitable to be eaten during breakfast or tea break. Anti Bloating Congee

  Bloating is a common problem for many of us. It causes uncomfortable feeling, body pain, feeling irritated, nausea and headache. A problem that sound simple but really makes our life disturbed. Usually, we go to the doctor for treatment, or we just buy medicines at the pharmacy. But we can also try to eat food that can reduce or treat bloating problem. It is also better if we try to find the cause of the bloating problem first, as this problem can be caused by many factors.  Ginger, garlic and some other herbs are often believed to reduce bloating problem. For me it really works. Drinking ginger tea really helps our body to eliminate extra gasses. It also makes our body feel better.  But besides making ginger tea, I am now making my anti-bloating congee, and eat it for lunch. Fish Fried Rice (Nasi Goreng Ikan)

Do you still have yesterday's fried fish, cooked fish or boiled fish in your kitchen? And also some cooked rice or yesterday's rice in the fridge? Then, you can make an easy dish for breakfast, lunch or dinner called Fish Fried Rice. It is a classic Malay dish, as far as I know. Kampung folks (village people) usually cook this menu in the morning for breakfast. It only requires a few ingredients and off you go.  The fish to use in the ingredients is any type of fish that you already have. I think most of fish types are suitable to be used for this dish. It must be already cooked. If you have raw fish, boil it first with some salt.
