Fish Fried Rice (Nasi Goreng Ikan)

Do you still have yesterday's fried fish, cooked fish or boiled fish in your kitchen? And also some cooked rice or yesterday's rice in the fridge? Then, you can make an easy dish for breakfast, lunch or dinner called Fish Fried Rice. It is a classic Malay dish, as far as I know. Kampung folks (village people) usually cook this menu in the morning for breakfast. It only requires a few ingredients and off you go. 

The fish to use in the ingredients is any type of fish that you already have. I think most of fish types are suitable to be used for this dish. It must be already cooked. If you have raw fish, boil it first with some salt. Fried fish or other cooked fish usually can be used. 


Ingredients

☘️ 1 small cooked mackerel fish or fish of your choice, de-boned. 

☘️ 2 shallots 

☘️ 3 small bird eye chilies, or 1 big dried red chili (soak in hot water if use dried chili). If you don't have chili you can use chili paste or chili powder.

☘️ A plate of cooked rice 

☘️ Salt 

☘️ Msg ( if you like)

☘️ Cooking oil 


Methods 

☘️ Pound or make the fish into paste. Do not add water. I use mortar and pestle to pound the fish until become paste. Maybe you can use food processor. Set aside.

☘️ Pound also shallot and chilies. I use mortar and pestle. You can use food processor. 

☘️ Heat around 3 tablespoons of cooking oil in a pan. 

☘️ When the oil is hot, add in fish paste. It is not a smooth paste, it must have very small fish chunks in it. Fry until a bit golden. If you are using an already fried fish, don't need to wait until golden because the fish itself is already fried. 

☘️ If oil is not enough, add some more oil. 

☘️ Then add in shallots and chili paste. Mix well with the fish. Fry until a bit golden. 

☘️ Add in rice. Sprinkle salt and msg. Mix the rice well with other ingredients. 

☘️ Then it is done. Enjoy the meal. 


This is the basic recipe. You can add other ingredients like oyster sauce, fish sauce, vegetables of your choice if you want. Msg is also an optional ingredient. 

Traditional recipes always use mortar and pestle to prepare the paste. It has a distinct texture that makes it tastier.
