Easy To Make Chicken Soup


I have been cooking for my aunt for a while. Taking care of her and making sure she eat healthy food is my priority. Porridge, soup and fried rice and also sandwiches are some of the meal I frequently prepare for us. And of course less sugar and salt in them.

Today I decided to cook chicken soup. Yesterday's menu was chicken kurma. I learn to prepare this dish healthily and use easier method to cook as I just cook for two people.

I added carrot and potato in the soup. Personally I prefer to use the part of chicken where they have bones and skin attached to them as they have more flavor. But for my aunt I use boneless part of chicken as she loves to eat boneless chicken meat. 

For 2 people


Ingredients

200 to 250 gram chicken meat 

1/3 medium onion (coarsely sliced)

1 tablespoon green onion ( only the lighter color part not the dark green leaves and slice them )

1/2 inch ginger (crushed)

3 cloves garlic (crushed and finely minced)

1/2 tomato/ 1 tablespoon lime juice /1 small tamarind peel

1 tablespoon minced Chinese celery/ celery stalk 

Some celery leaves 

2 inches of lemongrass stalk (take the upper green part)

White pepper powder 

Malay soup mix / five spice mix (taste will be different based on the spice mix used) (2/3 tablespoon)

Some cooking oil 

Some water 


Methods 

Heat 2 tablespoons cooking oil in the pot. I use non stick pan only. Use medium heat.

Add in chicken. Saute until the meat turn white. Add in garlic, green onion and celery stalk. Mix and saute until there are hints of caramelization on the chicken. 

Add in a pinch of white pepper powder and mix well. Add in the soup spice and mix well. Cook for 1 minute with medium heat. 

Add in carrot and onion. Mix well until aromatic. Add in 2 cups of water, lemongrass, and ginger. When the soup become more aromatic add in potatoes and tomato or tamarind peel. If you are using lime juice add it when heat is turned off. 

Cook until the potatoes are tender and the chicken  meats are also tender. If necessary add more water. Add water to just 1 cm above the ingredients. 

When the chicken and potatoes are tender add in a pinch of white pepper powder and salt. Taste test and turn off heat. If you are using lime juice you can add it now. 

And the chicken soup is ready. Although the instructions are a bit lengthy, it usually just take 30 to 40 minutes to make. =)
