Salted Fish Fried Rice (Nasi Goreng Ikan Masin)


Nasi Goreng or fried has become our family's staple dish. It is easy to make and can be an alternative choice for white rice dish. There are many types of nasi goreng such as Nasi Goreng Kampung (Country Fried Rice), Nasi Goreng Cina (Chinese Fried Rice), Nasi Goreng Ikan Masin (Salted Fish Fried Rice), Nasi Goreng Kerabu (Salad Fried Rice), Nasi Goreng Seafood ( Seafood Fried Rice) and many more. The most commonly made nasi goreng at home is only basic fried rice with addition of meat or dried salted fish and also egg. 

Today I will be sharing a recipe of nasi goreng which I made during breakfast for my family. It is nasi goreng ikan masin or salted fish fried rice. This fried rice is really liked by Malaysian as it has variation in its flavor as the fried salted fish is added in it. The salted fish which is usually used is Spanish Mackerel fermented fish in oil. But you can also use any types of salted fish that you like. So lets go to the recipe.

For 4 servings

Ingredients
  • 5 cup of cooked rice
  • 7 shallots (sliced or pounded into paste)
  • 3 to 7 bird eye chilies (crushed)
  • 5 cloves of garlic (crushed)
  • 7 tablespoon of small chunks of fried salted fish
  • Green vegetables of your choice (mustard, kale, pak choy, long bean and other vegetables can be used)
  • 1 carrot (optional) (diced)
  • 7 baby corns (sliced)
  • 200 gram beef or chicken meat
  • 1 egg
  • Some white pepper powder
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1 chicken stock cube
  • 3 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup of cooking oil

Methods
  • Heat the cooking oil in a large pan and fry the salted fish and tear the fish into small chunks. Set aside.
  • By using the same oil used for frying the salted fish, saute the garlic until golden and aromatic. 
  • Then add in shallot and bird eye chilies. Saute until they become aromatic. 
  • Then add in the egg and mix it with other ingredients. Add in white pepper powder and 1 teaspoon salt. Fry until the egg is well cooked. 
  • Then add in the beef or chicken and fry them until well cooked. Add in 1 teaspoon of salt. 
  • After the meat is cooked add in carrot and baby corns. After about 3 minutes add in green vegetables. Add in also oyster sauce and fish sauce. 
  • Add in chicken stock. Mix well.
  • Add in the remaining salt and sugar. 
  • Then add in rice. Mix the rice well with other ingredients. Cook until all the rice particles are not attached to each other and the rice become a little lighter. 
  • Lastly add in the chunks of fried salted fish and mix well. Turn off the heat and serve.
