Healthy and Easy Vegetable Pancake

Pancake is an ordinary dish in our house since I was a small child. But it is not the pancake the western people eat. Our pancake is a version of our own. We call it 'lempeng'. It is solid and soft. Sometimes it can be crispy, depending on the ingredients used and the method of cooking.  Our 'lempeng' or pancake is soft and a little bit salty. It is because we put margarine and salt in it. Yes margarine is not really healthy but we have been consuming it for decades.  I am not really a fan of plain lempeng pancake. My family eat it with sugar or condensed milk. Sometimes I eat it like that. But sometimes I eat it with curry or kurma. And many times, I add some vegetables in it.  Some of the vegetables I add in the lempeng pancake are Chinese celery, carrots, onions, cabbage, capsicum, chili and potato. Sauteed Cabbage With Turmeric

Recently I am eating cabbage more frequently. It is because I want to improve my health. And cabbage can stay longer in the fridge compared to some other vegetables like spinach and mustard greens. It is easy to prepare too.  However I sometimes don't really like the thicker part of cabbage. Usually I cut it smaller and thinner.  Recently too I frequently saute cabbage with turmeric and anchovy. I love to eat it with white rice and curry, with white rice and chicken in soy sauce, and many more. I think it is suitable to be eaten with rice and curry.  This dish I called sauteed cabbage with turmeric is made with onion, garlic, anchovies or anchovy cube, chili, mustard seeds and of course turmeric. I love the taste. It is inspired by Muslim Indian restaurant menu, but I don't really sure and don't have the recipe of their cabbage dish. Banana In Sweet Coconut Gravy

   Banana is a well loved tropical fruit. It is sweet and soft. And a little bit creamy. Banana is less sweet when it just ripe, and become sweeter until it about to rot. It is usually eaten raw and fresh.  In Malaysia, there are many dish made with banana. Most of them are sweet dish, often eaten as dessert or breakfast. There are also banana curry, a dish from northern peninsula. Indian and Malay rice are also prepared by putting the rice and meat on a banana leaf. It is delicious, as the banana leaf aroma permeate the rice.  Today I will be sharing a dish made from banana which is 'Pengat Pisang' or when I translate it to English it become Banana in Sweet Coconut Gravy. It is a sweet and creamy dish, made from banana, coconut milk and palm sugar. Chicken Congee

Today I decided to make chicken congee for my aunt. It's been a long time since I made her the congee. She likes it a lot.  There are many recipes of chicken congee. But I decided to make the congee based on my aunt's preference. She loves it simple, plain and pure.  She also loves potatoes and carrots in her congee. The flavor is pure based on fresh ingredients used. It is a healthy food, and a fulfilling one.  Chicken congee is also suitable for people with fever. Some will prefer chicken soup. Warm chicken congee can refresh a sick soul.  This recipe is for four servings. It takes more than an hour to make.  Ingredients 3 shallots, minced. Oyster Mushroom Soup

I like eating mushroom. It is a delicious and versatile vegetable packed with umami flavor. Mushroom soup, stir fried mushroom, crispy fried mushroom, mushroom fillings, I love them all. The unique flavor of mushroom make soups and tom yum tastier.  Today I bought a packet of oyster mushroom at nearby store. It looks and smell fresh. I decided to cook a clear mushroom soup with it. And I combined it with some other ingredients. It is tasty when eaten with hot white rice. You can also eat it on its own.
