Healthy and Easy Vegetable Pancake

Pancake is an ordinary dish in our house since I was a small child. But it is not the pancake the western people eat. Our pancake is a version of our own. We call it 'lempeng'. It is solid and soft. Sometimes it can be crispy, depending on the ingredients used and the method of cooking. Our 'lempeng' or pancake is soft and a little bit salty. It is because we put margarine and salt in it. Yes margarine is not really healthy but we have been consuming it for decades. I am not really a fan of plain lempeng pancake. My family eat it with sugar or condensed milk. Sometimes I eat it like that. But sometimes I eat it with curry or kurma. And many times, I add some vegetables in it. Some of the vegetables I add in the lempeng pancake are Chinese celery, carrots, onions, cabbage, capsicum, chili and potato. This depends on what I have in the kitchen.
