Fried Bitter Gourd With Egg And Curry Flavor

Image
I eat bitter gourd for health. There is a saying my teacher always told us when I was still studying in school, which is "Bitter things are medicine". Yes for bitter gourd. And my teacher always refer the saying to bitter gourd.  Bitter gourd is a crunchy vegetable. What prevent people from eating it is its bitter taste. I have a tip to reduce the bitterness of this vegetable which I already wrote here .  Sometimes I go to mamak restaurants to eat rice for lunch. Usually I eat their beef curry and this fried bitter gourd with egg. I then learned this recipe and tried cooking this several times. And yesterday I cooked this fried bitter gourd again to partner it with beef curry. And my father said it is acceptable. My father is very critical when criticizing food. So I decided to add it here into my recipe archive.  I ate this dish many times in the restaurants. Some people cook it with the egg crispy at the edges. In some place the egg is not crispy....

Homemade Chili Sauce

Image
Sometimes I make my own homemade chili sauce. It is easy. The taste of the sauce is a bit different from store bought chili sauce. However the taste of this homemade sauce suits the taste of fish cracker, fried tofu and fritters very well. I use dried chili to make this homemade chili sauce. Fresh chili can also be used but the taste will be slightly different.  This homemade chili sauce slightly resembles the taste of a type of dipping sauce you may find sold in the Eastern Coast of Malay Peninsular. It is called 'Pencicah' and another type is 'Colek Sauce'. It is a spicy, sweet and sour sauce. They are usually sold at around RM3.00 to RM4.00 price in the market, bazaar or raw fish cracker stalls.  Sometimes I did not add the garlic into the sauce. Sometimes I do. Hence if you do not like garlic or wants to simplify the sauce you can omit the garlic from the ingredients. Usually peoples like garlic taste in the sauce. I have yet to use pickled garl...

Peanut Coconut Sauce (Satay Sauce)

Image
Last few days my mother said she wanted to make 'nasi impit' (pressed rice) for our tomorrow morning breakfast. She asked me and my aunt to make the 'kuah kacang' (peanut sauce) for the meal. Nasi impit is a pressed rice dish usually eaten with kuah kacang or rendang.  'Kuah kacang' or peanut sauce is a sauce made from a combination of some herbs and ground peanut. This peanut sauce is usually served as satay dipping sauce, as prawn fritter dipping sauce, in lontong and as pressed rice sauce. It has a nutty and sweet taste, but also a bit spicy. The spiciness level of this peanut sauce can always be altered by reducing or adding the amount of chili used.  As far as I know, there are two versions of peanut sauce recipe here, which are peanut sauce without using coconut milk and peanut sauce with coconut milk in it. The peanut sauce which is cooked without adding coconut milk will have more spicy and herb taste, and the creamy taste will come only...

Beef Soup

Image
My mom is cooking beef soup today. Beef soup is one of my favorite food. I love soup and I like eating it with rice and bread. And I like it more when I am having fever. The perfect beef soup to me is the one that contains enough spices and herbs, and tender meat.   We usually eat beef soup with fried egg, fried salted fish and spicy shrimp paste sambal as condiment. And also steamy rice and cucumber.  The shrimp paste sambal and fried salted fish give a contrasting taste to the soup. Sometimes, we also fry egg by adding salty pickled fish in it.  Fried Salted Fish There are many types of beef soup such as rib soup, bone soup, oxtail soup, and leg soup.  The oxtail soup is delicious, because of its unique meat texture. But not many people like oxtail soup because they don't like eating the tail. Rib or bone soup is also delicious, but it must be cooked for a few hours to make sure the meat is tender and easy to eat.  I like...
